The second is the one that ruins dinner for months before anyone rings: temperature that reads right on the panel and bakes wrong in the cavity, or heat that creeps up and drifts back down instead of holding. How we diagnose it

We put a calibrated thermometer in the cavity and watch an actual heat-up and cycling curve, because that is the only way to separate a bad sensor from a bad control from a door that is not sealing. Then it is resistance on the oven temperature sensor against the manufacturer curve, continuity and draw on the bake and broil elements on an electric unit, and on gas the igniter, safety valve and burner flame pattern: a weak igniter that glows but never pulls enough current to open the valve is a classic "it will not light" that looks like it should work. After that, the relay board or control, the door gasket, hinges and springs, and the door switch and lock mechanism that can hold a self-clean latch engaged and lock the oven out entirely. Error codes are read and then verified against the hardware.

Repair or replace

Almost all of it is worth repairing. Sensors, elements, igniters, safety valves, relay boards, gaskets, hinges and door switches are all normal parts on a cooking appliance that is otherwise structurally fine, and an oven cavity does not wear out the way a sealed refrigeration system does. The exceptions are cracked cavity liners and cabinet damage. Where the discussion gets more interesting is a high-end range or a wall oven built into cabinetry: there, the cost of getting a replacement to fit is often the largest number in the conversation, which is why repair so often wins. What goes wrong in an oven, and what it actually is

Not generic troubleshooting. These are the faults that repeat on Charlotte service calls, and what each symptom usually turns out to be.

Bakes far hotter or colder than the setting

An oven temperature sensor drifting out of spec, a control that needs recalibrating, or a door that no longer seals. We measure the cavity through a full cycle before touching anything, because guessing at calibration is how an oven ends up wrong in the other direction.

Will not heat at all on bake

Electric: an open bake element (often visibly blistered or split), or a failed relay on the control board. Gas: a weak igniter that glows but cannot draw enough current to open the safety valve, which is the single most common gas oven no-heat and looks deceptively healthy.

Broil works but bake does not, or the reverse

Separate elements on separate relays, so one circuit failing while the other works is normal and diagnostic. It tells us to look at that element and that relay rather than at the whole control.

F-code on the display and the oven locks out

Most often an open or shorted temperature sensor circuit, a stuck door lock motor after a self-clean, or a control fault. Self-clean is hard on an oven: a lot of lock-motor and control failures show up in the cycle immediately after one.

Heat escaping around the door, or the door will not close square

A crushed or hardened door gasket, sagging hinges, or a broken door spring. Beyond the wasted heat, a door that does not seal makes every other temperature symptom worse and sends people chasing the sensor for no reason.

Uneven baking, one side always darker

Convection fan not running or running the wrong way, a partially failed element, or a blocked air path from a tray or liner placed where it should not be. We check the mechanical cause before touching calibration.

My oven temperature is way off. Can it be fixed or recalibrated?

My gas oven clicks and glows but never lights. What is that?
